One of the hardest things for me after the children left home was learning how to cook for a table for two. I live in the south where dinner consists of a main dish and several sides with bread and dessert! Figuring out how to remake my meals to fit two people without all the leftovers was no easy task.
Going to the grocery store is very hard for me. I am so used to buying things that my children like that it is hard to remember what we like. One of the most difficult things for me is figuring out how much to cook. When my children were home, leftovers were welcome, now not so much. There are only a few things that my husband, Phillip, will eat after it’s been in the refrigerator a couple of days.
I have come to the realization that we don’t need a starch, vegetable, bread and dessert with every meal. Most of the time at our table for two we only have a meat and one side. I have found that for Phillip and I that is plenty. The problem is that I always overestimate how much I need to cook. I am a member of the clean plate club so cooking too much is a major problem for me and my weight.

What I have found very helpful is meal planning. When I go to the store I know exactly what I am going to buy and how much I need to buy for each meal. For me, that is the key. If I just go through the store willy nilly buying what I think I need I end up with way too much food for us. I did find a cookbook on Amazon that has been very helpful, especially on weeknights. It has helped me figure out how much to buy and what I love is that there is minimal cleanup afterward.
