This chick has created the perfect breakfast smoothie and I am sharing it with you!! It is delicious, nutritious and best of all it is whole food plant-based friendly!!
And I am obsessed with it!! I used to eat oatmeal with fruit every morning but with the warmer weather, I wanted something cooler and more refreshing. I started reading posts on the WFPB groups on Facebook to see what they were eating and to my surprise, a lot of them aren’t eating at all… they are drinking their breakfast!
The Perfect Breakfast Smoothie
I started looking at recipes and trying to find some ideas for a quick and easy smoothie. It had to be ingredients that are easy to find and whole food plant-based compliant and I wanted it to contain enough nutrients that it would keep me full until lunch but most of all it had to taste good.
Well, guys, I think I have found it! I won’t make you wait until the end for the recipe but please make sure to read the entire post so you can see why I chose these ingredients.
This Chick’s Breakfast Smoothie Recipe
- 1 Green Apple
- 1 Banana
- 1/2 cup Frozen Blueberries
- 1/2 cup Frozen Mangos
- 1 1/2 cup Baby Spinach
- 4 Baby Carrots
- 1 tbsp Almond Butter
- 1 tbsp Ground Flaxseed
- 1 1/2 cups Unsweetened Almond Milk
The only prep is to core and slice the apple and you can leave the peel on or take it off, your choice.
Add all ingredients together in a blender and blend! It’s that simple! I set my blender to liquify and let it run for about 2 minutes. Sometimes I have to push the ingredients down to get it going but that is it.
This fills a 30 oz insulated cup perfectly. Just pour and enjoy as you drive to work or whatever your morning routine is.
Why I Chose These Ingredients
I spent quite some time researching and trying to find out what a good breakfast actually consisted of nutritionally. Believe me, that was not easy! There are so many conflicting articles out there that it was difficult to tell what was fact and what was opinion. After some searching, I found a chart that agreed with what I had found on some reputable sites.
Keeping this chart in mind I started selecting ingredients that would best meet these guidelines and also taste great.
How This Chick’s Smoothie Stacks Up
My smoothie does pretty darn good if you ask me! Let me answer this question first since it seems to be the one that everybody asks when they find out that my way of eating is whole food plant-based. Yes, there is plenty of protein in this smoothie! Believe it or not, there are almost 10 grams that mostly come from the almond butter but even fruits and vegetables contain protein.
- Protein 9.8 grams
- Fat 17.4 grams
- Carbohydrates 87.6 grams
- Sugars 44.9 grams
- Sodium .31 grams
- Dietary Fiber 15.7
- Saturated Fat 1.3
As you can see this chicks smoothie is packed with nutrition! Not only what’s listed on the nutrition label but it is also loaded with potassium, Antioxidants, Vitamin A, Vitamin C, Vitamin E, Iron and several of the B vitamins amongst other vitamins and minerals. It has 3 servings of fruit and 1 1/2 servings of vegetables. What an awesome way to start the day!
And It Tastes Great
That’s the most important part to me because if it doesn’t taste good I’m not going to drink it. You will just have to give it a try for yourself. Everyone’s tastes are different and you may not like this exact recipe but that’s the beauty of making a smoothie. Substitute strawberries for mangos or use peanut butter in place of the almond butter. It’s all up to you and the flavor combinations are endless!!
Until Next Week
I would love to hear what you think about my smoothie so feel free to post your comments.
I will be back next week with another whole food plant-based topic but until then you can check out my other posts…
