We have been hearing about this Over the Top Chili and how tasty it is. Since we love chili and love trying new recipes, of course, we had to try this one. We decided to video the process because this chili is cooked like no other chili I have ever seen.
The ingredients aren’t really that different than other chili but the way you cook the meat is the game changer. The recipe below requires a Big Green Egg and a cast iron pot but you may be able to figure out a way to do it with a different type of grill.
Over the Top Chili Recipe
- 1 lb ground beef
- 1/2 lb Italian sausage
- 4 – 5 strips of bacon chopped
- 1 16 oz can chili beans w/ sauce
- 1 16 oz can light or dark red kidney beans drained
- 2 16 oz cans diced tomatoes
- 1 16 oz can beef broth
- 1 10 1/2 oz can beef consomme
- 1 green bell pepper diced
- 1 onion diced
- 2 – 3 cloves of garlic minced
- 1 packet chili seasoning
- various spices to your taste preference
Saute chopped bacon in a pan over med to med-high heat. Once browned remove from grease and drain on a paper towel. Set aside about a 1/4 cup of bell peppers and 1/4 cup of onions then saute the rest in the remaining bacon grease. Add garlic and saute for just a minute more. Drain in a colander.
Add all ingredients except the meat and the peppers and onions that you set aside to a cast iron pot. Remember to add your favorite seasonings. Stir until mixed.
Mix the ground beef and Italian sausage and remaining peppers and onions together along with your favorite spices. Form this into a ball.
Place the pot of chili on your plate setter in your preheated Big Green Egg. Place your grill directly on top of the pot and place your meatball so it is over the pot of chili.
Cook at 275 – 300 degrees until meatball reaches an internal temperature of 165 degrees. Remove the meatball leaving the chili to continue cooking. Break the meatball up into bite-size pieces and add it and the bacon to the pot of chili. Continue cooking for another 45 min to an hour.
Total cook time 3 1/2 to 4 1/2 hours.
Remove from heat and enjoy!
